The pastry shell, between shape and consistency

The first part of the class focuses on the pastry shell and the importance of its thickness, shape and preparation. Watching the chef and then repeating each gesture makes the differences between the stages easier to understand. If you are new to pastry making, focus on a few practical details: how the dough looks and feels, how much to work it and which signs to look for before moving to the next stage.

The workshop is dedicated to cannoli and not to an entire Sicilian menu. This choice allows you to delve deeper into a product without losing your attention among many preparations. You can ask questions about possible alternatives at home, the tools needed, and the steps that require more precision. Taking some notes after work is useful; During preparation it is best to keep your hands free and follow the instructions.

The filling and the moment of tasting

The preparation of the ricotta-based filling completes the comparison between crunchiness and softness. Observing consistency and dosage helps to understand why the result depends on the balance of the parts, not just on the quantity of sugar or decoration. The moment of filling allows you to connect what you have done to the tasting, immediately recognizing the effects of your choices and gestures.

The final tasting is part of the experience, but should not automatically be considered a complete lunch. You can organize the workshop between two times of the day, leaving your appetite and time to enjoy dessert. If you participate with other people, comparing shapes and results adds a fun element without turning the activity into a competition: the goal is to learn a process and understand how to adapt it to your home kitchen.

An appointment near Porta Messina

The indicated meeting point is in Largo Giove Serapide 4, in front of the arch of Porta Messina. It is a convenient reference for those visiting the center of Taormina, but it should be distinguished from Porta Catania, at the other end of the main promenade. Arrive a few minutes early and check the name of the workshop on the reservation, because groups can meet in the area for different activities.

The presence of flour and dairy makes it important to communicate allergies and restrictions before booking. Ask what adaptations are really possible and whether the shared spaces are compatible with your needs. For the rest, comfortable clothing, suitable for working in the kitchen, is enough. If you want to continue your visit to the city after the course, leave your bags in your accommodation and only bring a small bag.

Taormina

How to get there

From the train station

Taormina-Giardini

From Taormina-Giardini station, on the coast, go up towards Taormina by local bus or taxi. Once in the center, reach Porta Messina and Largo Giove Serapide 4 following the point indicated in the voucher. Don't try to connect the station to the workshop with a simple short walk: the center is located high up and the difference in altitude is significant. Also calculate the final distance from the possible bus terminal to the meeting place.

From the airport

Catania Fontanarossa

From Catania Fontanarossa you can choose bus connections to Taormina or combine a transfer from the airport with the train to Taormina-Giardini. Check where the selected service ends: arriving on the coast is not the same as already being in the historic center. If you participate on the day of the flight, leave room for luggage and boarding; with an overnight stay in the city the workshop becomes an easier break to organise.

Always check the meeting point on your voucher: it may vary by the option booked. Check timetables and connections again before travelling.

Before you go

  • Set Porta Messina and Largo Giove Serapide 4 on the map: Porta Catania is a different entrance to the historic center.
  • Communicate allergies to milk, gluten or other ingredients in advance and wait for confirmation on the compatibility of the preparation.
  • The experience includes the preparation and tasting of the dessert; plan a full meal separately if you need it.
