A dough to be observed with your hands

Working the bread allows you to notice consistencies and changes that tasting alone does not reveal. During the workshop you can focus on the relationship between ingredients, water and processing, asking what signals to observe to understand when a step is completed. The presence of the bakers working at the oven helps to connect gestures to a concrete result, instead of simply following a written recipe without sensory references.

The shape of the loaf is another interesting part of the process. Giving structure to the dough means understanding how a movement affects the final appearance. There is no need to look for a perfect copy of the professional's work: comparing your result with the demonstration makes the points to improve evident and leaves useful indications for a possible attempt in the home kitchen.

The bakery and brunch as part of the visit

The environment of an oven allows you to observe a production activity, with times and organization different from those of a domestic kitchen. Follow the instructions on the spaces in which to move and on the moments dedicated to questions. The preparation of bread requires phases that do not always coincide with the duration of a workshop: asking how your work fits into the overall process helps to understand what you are seeing.

The planned brunch offers time at the table after the practical part. Consider it when planning your day, avoiding immediately setting another important meal. Ingredients and preparations may not be adaptable to all dietary restrictions; for allergies or specific needs it is necessary to receive confirmation before booking, especially in an environment where flour is a central part of the activity.

An address off the Sassi promenade

The meeting point is at Forno Di Gennaro, in Via Nazionale 52. It is not located on the best-known route of the Sassi: set the complete address and organize the transfer from your accommodation or the station. Arriving a few minutes early allows you to settle in and start with the group, without interrupting a demonstration already underway.

The language indicated for the workshop is Italian. If you don't understand it, first check with the organization what assistance is possible, without assuming simultaneous translation. Your selected rate may be non-refundable: check the conditions for your date before paying. Once your participation has been defined, choose comfortable clothes and closed shoes, suitable for a practical activity in a workplace.

Matera

How to get there

From the train station

Matera Centrale (FAL)

From Matera Centrale, on the Ferrovie Appulo Lucane network, reach Via Nazionale 52 with a walk planned on the map or with a short local transfer. The bakery is in a different urban area from the Sassi, so don't just follow the tourist signs towards the ancient centre. If you arrive from Bari, check the FAL service stop and any changes; with luggage it is more practical to go to the accommodation first.

From the airport

Bari Karol Wojtyła

From Bari Karol Wojtyła airport you can reach Bari and then Matera with FAL, or choose a direct road service available for the travel date. Consider the times of the entire combination, including the last stretch towards Via Nazionale. Airport transfer is not included in the workshop. If the flight arrives on the same day, a later departure or an overnight stay avoids tying a rigid fare to too close connections.

Always check the meeting point on your voucher: it may vary by the option booked. Check timetables and connections again before travelling.

Before you go

  • The workshop is indicated in Italian: check the language before booking if there are people in the group who do not understand it.
  • Check the conditions of the fare, currently non-refundable, and choose the date when the rest of the trip is sufficiently defined.
  • Communicate allergies and restrictions in advance: bread making and shared use of the oven may limit possible adaptations.
